A true labour of love, this cheese is washed in local pinot noir before being wrapped in vine leaves and matured for 3-4 weeks. When young it is fresh-tasting with lemony acidity but as it ages and breaks down, it becomes complex and savoury. If you are looking for the perfect cheese to pair with your pinot noir, this is it.
MARC 200g
Marc is the fancy name for the grapes after you have fermented and pressed them to make wine. Basically they are just skins and seeds but still have heaps of great flavour and aroma (imagine how the inside of a winery smells!)

'Private Universe' Pinot Noir is hand-picked, 50% whole bunch fermented, wild yeast, unfined and unfiltered. Low crops from silica quartz soil produce intense dark cherry and wild red fruit aromas, with spice and herb characters coming from the whole bunch fermentation. Intricate red fruit and spice flavours flourish in a rich palate with savoury finish and fine, grainy tannins. Powerful yet subtle, evocative, generous, layered and structured.
