Our Dead Horse (Tomato Sauce)

You might know it better as Tomato Sauce but for as long as I remember it has always been ‘Dead Horse’ in my family. This recipe comes from my great grandfather’s cookbook, written in perfect copperplate, and was made every year by my Mum. The production would start with a pilgrimage to Greek friends who were market gardeners on the Murray River. We would come home with a boot-load of ripe tomatoes (and the best watermelons I have ever tasted). Mum would get to work, chopping, boiling, sieving and bottling, and the house would reek of sauce for days. Now this falls to her kids and every year we get together and go through the whole production. I hope you enjoy this piece of my childhood.
