Saint Noir

Saint Noir is a funky little white mould cheese we created a few years ago while experimenting with our Whey Stout.

Until now, every batch of Saint Noir has been washed with our Whey Stout alone. This latest batch takes things further, using both our Whey Stout and Return of the Mainlander, our new oatmeal stout, to wash and mature the cheese.

It’s a full circle moment: the whey from our cheesemaking goes to the brewery to make Whey Stout, and now both stouts return to the cheesery to help finish the cheese.

The result is deeper, richer and more complex than ever. You’ve got to try it, ideally with a bottle of stout on the side!
