Raw Milk C2 (Swiss Style) - Quarter Wheel Size
Our Raw Milk C2 is a great example of the seasonality of milk and cheese.
The cheese in this offer was made to the same recipe by the same cheesemaker as our standard C2. 3 batches of C2 made during winter 2023 developed differently to normal. The only difference was in the feed the cows were on at that particular time and it has resulted in a cheese that is very Swissy!
Made from Winter milk, 2023, these batches are heavily leaning toward flavours and texture you find in alpine Swiss cheese; flexible, bendy paste, small to medium sized gas holes and very sweet, very tropical fruit notes, with much less of the brothy, nutty savoury profile of C2.
This batch of C2 is available in quarter wheel portions of around 800g.
