To celebrate Raw Tom being awarded a Super Gold Medal and the Trophy for Best Australian Cheese at this year's World Cheese Awards, we're launching our first ever Raw Tom Adoption Program.
We have a very limited number of Raw Tom Wheels available for adoption. They'll be made in January 2025 using the best of our summer milk, before being aged for 4-5 months and delivered to you in mid-2025.
ABOUT RAW MILK CHEESE
Raw milk cheese is deeply tied to the seasons and the natural cycles of milk production. The quality of the milk we use depends on the diet of our cows, which changes with the seasons. When their diet shifts, it impacts the flavour, texture, and overall character of the cheese we can produce.
We’re committed to crafting cheeses that truly celebrate these natural rhythms. Our Raw Tom, for example, is made with unpasteurised milk to showcase the purest expression of our craft. However, to maintain the exceptional quality we want to deliver, there are times when production pauses, ensuring we only offer you the best possible cheese.
Think of it as a reminder that great cheese is worth waiting for—and when it’s back, it’ll be as incredible as ever!
ABOUT RAW TOM
Raw Tom is a simple cheese, and yet encapsulates the two things critical to great cheese - fantastic milk, and real maturation techniques. On the outside is a dry, natural rind that is developed over a few months of ageing. On the inside is just pure milk, reflecting what the cows are eating through the seasons.
Made from unpasteurised cow's milk in the tradition of the Tomme cheeses made in the mountainous French Savoie region.
THE ADOPTION PROCESS
By adopting a Raw Tom, you'll be securing your personal wheel, which we will mature over 4-5 months before delivering to you in 2025. Using the best of the summer milk from our Glen Huon Farm in January 2025, we will begin the process by producing your wheel of Raw Tom in our hard cheese-making facility in Ranelagh. It will be carefully matured, and then sent to you around May.
To place an order and secure your wheel of Raw Tom, simply pay a deposit of $250, and we'll do the rest!
Each wheel of handmade cheese will be around 3.5-4kg and will last several weeks after you have cracked it (don't worry, we will tell you how to look after it).
The final cost of your cheese will be determined by its final weight, with a price per kg of $129. We will weigh it just before we send it because your cheese will lose about 15% of its body weight during maturation. You can expect the total price to come in between $450 to $550, depending on the final weight of your wheel.
