Mothership Fermented Chilli
Rough Rice (Adam James) is a Lutruwita based food innovator whose obsession is the alchemy of fermentation, preservation and flavour making. His work in fermentation takes traditional techniques from around the world and adapts them to local, seasonal + organic produce. The resulting condiments are natural, nutritious and nourishing (with no numbers, fillers or nasties) and are all vegan and gluten free.
‘Mothership’ is their flagship fermented chilli sauce. The base ferment is in its 11th year and it lives happily in a big beautiful locally thrown crock. To date it is made up of over 30 ingredients and she brings depth, complexity and spice to all she meets. 100% organically grown and wild fermented in Lutruwita. A perfect addition to tacos, eggs, stir fry’s and braises. It is beautiful on literally everything.
