Our Raw Milk Cheese Box brings together three cheeses made from the fresh, unpasteurised milk of our Huon Valley dairy herd. It includes two portions each of Raw Tom, Raw George and Raw Milk C2 — six portions in total.
What's in the box
Raw Tom — 2 × 130g Our founding cheese, made with raw milk and matured to develop a dry natural rind, savoury depth and a true reflection of the seasons.
Raw George — 2 × 130g Crumbly and savoury with a salty bite, intense umami and gently brothy notes from slow maturation in large wheels.
Raw Milk C2 — 2 × 130g Australia's first raw milk cheese, matured for 4–8 months to develop a sweet aroma, mildly nutty flavour and long finish.
Why raw milk?
Raw milk captures the character of the place and season in which it is produced. The milk for these cheeses comes straight from our small-scale Huon Valley dairy farm, preserving the native microflora that help develop their distinctive flavour.
