Methode Ancestrale 100% Hand-picked Pinot Noir from the white gravel soils of the Yorktown Vineyard. Wild yeast fermentation begins in tank and completes in the bottle with no dosage. The wine is sealed while completing fermentation.

This rustic method is the oldest and most fraught way to make sparkling wine, and will contain yeast sediment. You can expect this naturally fermented wine to be a cloudy red-ish colour with sweet floral top notes and a lively bubble on the palate.

Wild, complex and not for everyone. Only 675 bottles produced.

"One hundred days you wait for it, Something bright, Something so good." Mark Lanegan

“THIS WINE WAS POSSIBLY THE BEST WINE OF ITS TYPE I’VE EVER TASTED: A LOVELY DRINK, FRESH, CLEAN, BALANCED AND DESPITE ITS YOUTH, FULL OF INTEREST. IT DOESN’T SACRIFICE ITS ESSENTIAL WILDNESS.” Huon Hooke, The Real Review
